Most Japanese teas are made from beautifully handled leaves, and much of their elegance and rich color is due to their style of processing: steaming immediately after harvesting, then air drying. This two-step process does much to preserve the flavor, the fragrance, and the beautiful color of the teas, particularly gyokuro but also sencha, the everyday Japanese green tea.
